For the waffle “tacos”:
1 cup pancake or waffle mix
¾ cup milk
1 egg
1 tbsp melted butter or oil
For the filling:
6–8 breakfast sausages (or sausage links, cooked)
4 large eggs
2 tbsp milk (for fluffy eggs)
Salt & pepper to taste
½ cup shredded cheddar cheese
Optional toppings:

1️⃣ Make the mini waffles
Preheat your waffle maker.
In a bowl, mix waffle batter: combine mix, milk, egg, and melted butter.
Pour small amounts into the waffle maker to create mini waffles (perfect taco size).
Cook until golden brown. Set aside.
2️⃣ Cook the sausages
Heat a skillet over medium heat.
Cook sausages until browned and fully cooked.
Cut them in halves or small pieces for easier filling.
3️⃣ Scramble the eggs
In a bowl, whisk eggs with milk, salt, and pepper.
Cook in a non-stick pan over low-medium heat.
Stir gently until soft and fluffy.
Remove from heat and sprinkle cheese on top (it will melt nicely).
4️⃣ Assemble the waffle tacos
Take a mini waffle and gently fold it like a taco (do this while warm so it bends easily).
Add scrambled eggs inside.
Top with sausage pieces.
