  • 1 can (10 oz / 280 g) diced tomatoes with green chilies
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup beef broth

For the Cheese Layer

  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 oz (115 g) cream cheese, softened

Instructions

Step 1: Cook the Beef

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion and cook for 3–4 minutes until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add ground beef and cook until browned, breaking it apart as it cooks.
  5. Drain excess grease if necessary.

Step 2: Add the Flavor

  1. Sprinkle taco seasoning over the beef.
  2. Stir in diced tomatoes, tomatoes with green chilies, black beans, corn, and beef broth.
  3. Bring to a gentle simmer and cook for 10 minutes.

Step 3: Make It Cheesy

  1. Reduce heat to low.
  2. Stir in cream cheese until completely melted.
  3. Add half of the cheddar and Monterey Jack cheese and stir until creamy.
  4. Sprinkle remaining cheese over the top.
