🌿 Ingredients (2 servings)
200 g pasta (penne/fusilli/spaghetti—your choice)
1 tbsp butter + 1 tbsp olive oil
5–6 garlic cloves (finely chopped or crushed)
1 small onion (finely chopped)
½ cup milk or cream
¼ cup pasta water (saved after boiling)
¼ cup cheese (mozzarella/cheddar/processed or mix)
Salt & black pepper to taste
½ tsp chilli flakes
½ tsp oregano or mixed herbs
Fresh basil or coriander (optional but enhances flavor)
Optional add-ins:
Corn, mushroom, broccoli, capsicum, spinach, olives
Paneer/chicken/shrimps for protein
🔥 Instructions
- Boil Pasta
- Add pasta to boiling salted water.
- Cook until al dente (soft but firm).
- Drain & save some pasta water.
- Prepare the Sauce
- Heat butter + oil in a pan.
- Add garlic, sauté until fragrant (don’t burn!).
- Add onions and cook till soft.
- Pour in milk/cream, stir continuously.
- Add salt, pepper, chilli flakes & oregano.
- Mix in cheese to make a creamy sauce.
- Add pasta water if it gets too thick.
- Combine
- Add cooked pasta to sauce.
- Toss gently so it coats well.
- Add basil/coriander and extra cheese if desired.
