Ingredients (Serves 2–3)

1 cup whole wheat flour (atta)

1–1.5 tbsp jaggery powder / honey / stevia (optional, adjust to taste)

1 tsp baking powder

¼ tsp baking soda (optional, for extra fluffiness)

1 cup milk (dairy or almond/oat milk for healthier option)

1 egg (optional — skip for eggless)

1–2 tbsp butter or oil

A pinch of salt

½ tsp vanilla essence (optional)

Cinnamon powder – ¼ tsp (optional but adds great flavor)


Instructions

  1. Mix dry ingredients
    In a bowl, add wheat flour, baking powder, baking soda, salt, and jaggery. Mix well.
  2. Prepare the batter
    Add milk, egg (if using), vanilla, and melted butter.
    Whisk until smooth. The batter should be slightly thick—adjust consistency with a little milk if needed.
  3. Rest the batter (important for softness)
    Let it sit for 10 minutes.
  4. Cook the pancakes

Heat a non-stick pan and lightly grease it.

Pour a ladleful of batter and cook on medium heat.

When bubbles appear on top, flip and cook the other side until golden brown.
