  1. Traditional Mochi

Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 100 g sweet red bean paste
• Cornstarch (for dusting)

Procedure:

  1. Mix rice flour, sugar, and water into a smooth batter.
  2. Steam or microwave until thick and sticky.
  3. Dust surface with cornstarch and knead lightly.
  4. Divide into portions and flatten.
  5. Add red bean paste and shape into balls.
  6. Dust with cornstarch and serve.
  7. Strawberry Mochi

Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 5–6 strawberries
• 2 tbsp strawberry jam
• Cornstarch

Procedure:

  1. Prepare mochi dough as above.
  2. Flatten dough pieces.
  3. Place strawberry and a little jam inside.
  4. Wrap and seal into balls.
  5. Dust and serve.
  6. Matcha Mochi

Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 1 tbsp matcha powder
• 100 g red bean paste
• Cornstarch

Procedure:

  1. Mix matcha with flour, sugar, and water.
  2. Cook until sticky dough forms.
  3. Divide and flatten pieces.
  4. Fill with red bean paste.
  5. Shape and dust.
  6. Chocolate Mochi

Ingredients:
• 150 g glutinous rice flour
• 30 g cocoa powder
• 50 g sugar
• 180 ml water
• 100 g chocolate ganache
• Cornstarch

Procedure:

  1. Mix flour, cocoa, sugar, and water.
  2. Cook into sticky dough.
  3. Flatten pieces and fill with ganache.
  4. Shape into balls and dust.
  5. Mango Mochi

Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 100 g fresh mango (diced)
• 2 tbsp mango jam
• Cornstarch

Procedure:

  1. Prepare mochi dough.
  2. Flatten dough pieces.
  3. Add mango and jam in center.
  4. Wrap and shape.
  5. Dust and serve.
  6. Red Bean Mochi

Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 100 g sweet red bean paste
• 50 g cooked red beans
• Cornstarch

Procedure:

  1. Make mochi dough.
  2. Flatten pieces and add red bean filling.
  3. Shape into balls.
  4. Dust with cornstarch.
