- Traditional Mochi
Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 100 g sweet red bean paste
• Cornstarch (for dusting)
Procedure:
- Mix rice flour, sugar, and water into a smooth batter.
- Steam or microwave until thick and sticky.
- Dust surface with cornstarch and knead lightly.
- Divide into portions and flatten.
- Add red bean paste and shape into balls.
- Dust with cornstarch and serve.
- Strawberry Mochi
Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 5–6 strawberries
• 2 tbsp strawberry jam
• Cornstarch
Procedure:
- Prepare mochi dough as above.
- Flatten dough pieces.
- Place strawberry and a little jam inside.
- Wrap and seal into balls.
- Dust and serve.
- Matcha Mochi
Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 1 tbsp matcha powder
• 100 g red bean paste
• Cornstarch
Procedure:
- Mix matcha with flour, sugar, and water.
- Cook until sticky dough forms.
- Divide and flatten pieces.
- Fill with red bean paste.
- Shape and dust.
- Chocolate Mochi
Ingredients:
• 150 g glutinous rice flour
• 30 g cocoa powder
• 50 g sugar
• 180 ml water
• 100 g chocolate ganache
• Cornstarch
Procedure:
- Mix flour, cocoa, sugar, and water.
- Cook into sticky dough.
- Flatten pieces and fill with ganache.
- Shape into balls and dust.
- Mango Mochi
Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 100 g fresh mango (diced)
• 2 tbsp mango jam
• Cornstarch
Procedure:
- Prepare mochi dough.
- Flatten dough pieces.
- Add mango and jam in center.
- Wrap and shape.
- Dust and serve.
- Red Bean Mochi
Ingredients:
• 150 g glutinous rice flour
• 50 g sugar
• 180 ml water
• 100 g sweet red bean paste
• 50 g cooked red beans
• Cornstarch
Procedure:
- Make mochi dough.
- Flatten pieces and add red bean filling.
- Shape into balls.
- Dust with cornstarch.
