🧺 Frankie Basket Recipe
Ingredients
For the Frankie Rotis:
1 cup wheat flour
½ cup all-purpose flour (optional — makes softer rotis)
Salt to taste
1 tbsp oil
Water (to knead)
For Filling:
2 medium potatoes (boiled & mashed)
½ cup paneer (crumbled)
1 small onion (finely chopped)
½ tsp red chilli powder
½ tsp garam masala
½ tsp chaat masala
¼ tsp turmeric
1 tsp lemon juice
Salt to taste
Coriander leaves (chopped)
Toppings & Garnish:
Sev or crushed nachos
Sweet chutney + Green chutney
Mayonnaise / Cheese sauce (optional)
Grated cheese
Sliced onions, tomatoes, capsicum for crunch
Fresh coriander
🌯 Steps to Prepare
- Make the wrappers (mini frankie rotis)
- Mix wheat flour, maida, salt & oil.
- Add water gradually & knead into a soft dough.
- Rest for 10 mins.
- Roll into small discs & cook lightly on tawa without browning too much.
- Prepare Frankie Filling
- In a bowl mix boiled potato + paneer + spices + lemon juice + onions + coriander.
- Taste and adjust seasoning.
- Assemble Mini Frankies
- Place a portion of filling inside each roti, roll tightly.
- Secure with toothpicks if needed.
- Make the Frankie Basket
- Place 4–6 small frankie rolls standing upright in a serving bowl or plate close together like a basket.
- Drizzle green chutney, sweet chutney & mayo/cheese sauce over them.
