pistachio Cake

Ingredients

For the cake:
• 1 cup shelled pistachios (unsalted)
• 1½ cups all-purpose flour
• 1 cup sugar
• ½ cup butter (softened) or oil
• 3 large eggs
• 1 cup milk
• 1 tsp vanilla extract
• 1½ tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt

Optional (for stronger color/flavor):
• A drop of green food coloring
• ½ tsp almond extract (pairs beautifully with pistachio)

1. Prepare pistachios
Blend pistachios into a fine powder (not paste).
2. Preheat oven
180°C (350°F). Grease and line your pan.
3. Cream butter & sugar
Beat until light and fluffy.
4. Add eggs
One at a time, mixing well.
5. Add flavor
Stir in vanilla (and almond extract if using).
6. Mix dry ingredients
Flour, baking powder, baking soda, salt, and ground pistachios.
7. Combine
Add dry ingredients alternately with milk. Mix gently.
8. Bake
30–40 minutes or until a toothpick comes out clean.
