🥗 Spinach Salad

Ingredients

2 cups fresh spinach leaves (washed & dried)

½ cup cherry tomatoes (halved)

¼ cup cucumber slices

1 small onion (thinly sliced)

¼ cup boiled corn or chickpeas (optional for protein)

¼ cup crumbled feta or paneer cubes

1 tbsp roasted almonds / walnuts / sunflower seeds

Salt & pepper to taste


Dressing (simple & healthy)

1 tbsp olive oil

1 tsp lemon juice or apple cider vinegar

½ tsp honey (optional)

A pinch of salt

Black pepper to taste

½ tsp sesame seeds (optional)


Instructions

  1. In a large bowl, add spinach leaves.
  2. Toss in tomatoes, cucumber, onions, and corn/chickpeas.
  3. Add feta/paneer and nuts or seeds for crunch.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, salt & pepper.
