  1. Prepare oven & pan
    • Preheat oven to 325°F (160°C).
    • Use an ungreased 10-inch tube pan (important for chiffon cakes to rise properly).
  2. Mix dry ingredients
    • In a large bowl, sift together flour, 1 cup sugar, baking powder, and salt.
  3. Make wet mixture
    • In another bowl, whisk egg yolks, oil, water, and vanilla until smooth.
    • Add to dry ingredients and mix until combined.
  4. Beat egg whites
    • In a clean bowl, beat egg whites with cream of tartar until soft peaks form.
    • Gradually add remaining ½ cup sugar and beat until stiff peaks form.
  5. Fold gently
    • Fold egg whites into batter in three additions, using a spatula.
    • Gently fold in floured blueberries.
  6. Bake
    • Pour batter into tube pan.
    • Bake 55–65 minutes, until golden and springy to the touch.
    • Immediately invert pan onto a bottle or rack to cool completely (prevents collapse).
  7. Release & garnish
    • Once cooled, run a knife around edges to release cake.
    • Whip cream with sugar and vanilla until soft peaks form.
    • Spread or pipe over cake, garnish with fresh blueberries.
