- Step 1: Prepare the Chicken
- Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through. Season both sides with salt, pepper, and paprika.
- Step 2: Cook the Mushrooms
- Heat butter in a skillet over medium heat. Add garlic and mushrooms, cooking for 5–6 minutes until soft and golden. Stir in Italian seasoning and remove from heat.
- Step 3: Make the Filling
- In a bowl, combine cooked mushrooms, cream cheese, mozzarella, parmesan, and parsley. Mix until creamy and well combined.
- Step 4: Stuff the Chicken
- Fill each chicken breast pocket generously with the mushroom cheese mixture. Secure with toothpicks if needed.
- Step 5: Sear the Chicken
- Heat olive oil in a large skillet over medium-high heat. Sear the stuffed chicken for 4–5 minutes per side until golden brown.
- Step 6: Finish Cooking
- Reduce heat to medium-low, cover the skillet, and cook for another 10–12 minutes until the chicken is fully cooked and reaches an internal temperature of 75°C (165°F).
- Step 7: Make Garlic Butter Sauce
- In the same pan, melt butter and sauté garlic for 1 minute. Spoon the garlic butter sauce over the chicken and garnish with parsley.
Notes
Use brown mushrooms for a deeper flavor.
Add spinach to the filling for extra nutrition.
Serve with mashed potatoes, roasted vegetables, or pasta.
