Delicious Mediterranean Chickpea Salad

A fresh and colorful Mediterranean chickpea salad packed with crisp vegetables, creamy feta cheese, and a zesty homemade dressing. Perfect for lunch, dinner, or meal prep.

  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced
  • 2 tablespoons fresh parsley chopped
  • For the Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1 garlic clove minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Method
 

  1. In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, feta cheese, olives, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently until everything is evenly coated.
  4. Chill for 15–20 minutes before serving for the best flavor.
  5. Serve fresh and enjoy.

Notes

Add grilled chicken for extra protein.
You can substitute feta cheese with mozzarella pearls.
Best served cold.
